''Haru no Kaiseki: Tsukuri - Hirame Sogizukuri, Kuruma-ebi Nama-age'' (Springtime Kaiseki: Sashimi - Flounder Sashimi, Oil-blanched Prawns )
This is the Tsukuri or the Raw fish course. It is a commonly served course. This particular dish is flounder and prawns which have been lightly-blanched in hot oil, cooking the surface and leaving the center raw.
